  GABA is produced through a biotechnological process in which glutamate decarboxylase (GAD) enzymes, isolated from selected microorganisms, convert L-glutamate into Gamma-Aminobutyric Acid (GABA) via decarboxylation.

GABA and CO2 are created through the decarboxylation reaction process of L-glutamate by Glutamate decarboxylase (GAD)
